Pecan Banana Bread
When I think of coffee I immediately crave a banana bread slice. Whether you want it to taste purely like bananas or would like to add some of your favorite toppings, this recipe will leave you speechless.
Ingredients:

3 ripe bananas
- 2 c. all purpose flour

2 eggs

3/4 c. brown sugar

1/4 tsp. salt
- 1/2 c. melted butter
-
1 tsp.baking soda
-
1/4 c.sliced almonds
- 1/4 c. pecans
Prepare:
- Preheat your oven for 450 degrees
- In a large bowl, smash bananas. Add one egg at a time and beat well in between each.
- Combine flour, brown sugar and melted butter together.
- Throw in some of your favorite toppings. ( chocolate chips, pecans, walnuts, almonds etc)
- Pour into greased loaf pan and bake for 60-65 minutes.
- Let it cool off for 5 minutes and cut it up.
- Serve a nice warm slice.
Banana Ice cream
This dairy-free dessert is one of a kind. Popular on Pinterest for some time now and it really deserves the hype.
Ingredients:

2 -3 FROZEN bananas

3/4 c. almond or coconut milk
- 2 tsp vanilla extract
-
sliced almonds
- coconut flakes
Prepare:
- Cut up frozen bananas into chunks. Add milk and vanilla extract along with the banana into blender.
- Blend together until smooth and runny. You want to make sure you don't let it blend for too long though.
- Pour into loaf pan. Freeze for 3-4 hours.
- Serve in a bowl or sugar cone and add toppings you desire. ( I personally love the combination of coconut flakes and sliced almonds)
Energy Bites
We all need an energy fuel from time to time and this is the perfect solution. Requires no baking and prep time is less than 5 minutes.
Ingredients:

1 c. rolled oats
- 1/4 tsp vanilla extract
- 2 tbs honey
- 1 tbs nutella
- 1/4 tsp chia seeds
- 1/4 tsp flax seeds
Prepare:
- In a large bowl, add oats, vanilla extract, chia seeds, and flax seeds. A protein powder can also be added if you wish.
- Pour the honey and nutella with the dry ingredients.
- Mix well all together and refrigerate for a 1-2 hours.
- Take plastic cover off bowl and roll up the mix into small balls.
- Place balls again in the fridge for 10 more minutes and take a bite!
Chocolate Chip Banana Bars
Perfect mix for some sweet and late night snack
Ingredients:

2 ripe bananas
- 2 egg
- 1/4 c. coconut oil
- 1/4 c. milk
- 1 1/2c almond flour
- 1c. chocolate chips
- 1 tbs baking powder
- cinnamon
- salt
Prepare:
- Preheat oven 350 F
- Smash bananas and mix in with eggs, flour, milk and coconut oil.
- Add salt, baking powder and cinnamon
- Mix thoroughly together
- Place in rectangle pan with butter
- Place in oven for 20-25 minutes
- Let cool down and slice up into 24 pieces.
- Take a warm bite and enjoy
